FISH TACOS

1/2 to 3/4 lb. firm fish for barbecue grill
1 large potato, cubed and cooked
fresh salsa
chopped tomatoes
grated Cheddar and Jack and
jalapeno cheese
shredded lettuce
fresh steamed corn tortillas
1/2 pkg. taco seasoning (optional)

Barbecue fish on grill or use leftover grilled fish. If
a spicy flavor is desired, toss fish (broken into pieces) with
taco seasoning. Boil potatoes; cube. Heat tortillas.
Serve buffet style. Everyone prepares their own taco.
Hold warm tortilla in hand; fill with fish, potatoes, cheese,
salsa, tomatoes and lettuce. Top with hot sauce, catsup or
green taco sauce.

Note: Plan to have leftover fish from a previous meal.
Reheat quickly and toss with taco seasoning. Use shark,
halibut, swordfish, orange roughy, mahi mahi, etc.--
